Warm sauce, not hot sauce
A warm chocolate sauce creates a pleasant contrast with cold ice cream. Very hot sauce melts the scoops rapidly and can make the serving uncomfortable to eat. Let the sauce cool before assembling and check its temperature carefully.
Golden syrup helps the sauce remain glossy and contributes sweetness. This is a small-batch dessert sauce rather than hard-setting chocolate topping. It should stay spoonable over the ice cream.
Melt gently
The cream's warmth is enough to melt finely chopped chocolate without placing the chocolate directly over high heat. Stir from the centre until the mixture becomes uniform. If a few pieces remain, return to very low heat briefly while stirring.
Chocolate percentage changes the final flavour. A moderately dark chocolate gives contrast to sweet vanilla, while a very high-cocoa bar makes a more bitter sauce. Taste the chocolate before deciding which style you prefer.
Control the amount at serving
The recipe makes enough sauce for four modest sundaes, with some variation depending on how generously it is poured. Start with a small spoonful and offer more separately rather than covering every surface immediately.
A bowl is easier than a narrow glass for warm sauce because it lets the eater combine small amounts with each scoop. Have spoons ready before assembly; the temperature contrast is best enjoyed straight away.
Make the sauce ahead if helpful
The sauce can be made earlier and chilled, then warmed gently in a pan while stirring. Add a teaspoon of cream only if necessary to loosen it. Do not boil repeatedly, which can change the texture and evaporate liquid.
What you'll need
- 500 g vanilla ice cream
- 80 g dark chocolate, finely chopped
- 100 ml double cream
- 20 g golden syrup
- 10 g unsalted butter
- 1 tbsp finely grated chocolate, optional
Let's make it
- Warm cream and golden syrup gently in a small pan until steaming. Remove from heat.
- Add chopped chocolate and butter. Wait one minute, then stir until smooth and glossy.
- Let the sauce cool until warm rather than hot, about 10 minutes, stirring occasionally. It should fall from a spoon in a thick ribbon.
- Divide ice cream between four small bowls. Spoon a measured portion of sauce over each, keeping any extra separate.
- Add optional grated chocolate and serve immediately.
Make it your own
Milk chocolate produces a sweeter sauce; reduce expectations of dark-chocolate contrast rather than treating it as identical.
A small pinch of salt can be added to the sauce after tasting.
Keeping it fresh
Cool spare sauce promptly and refrigerate within 2 hours at 5°C or below, covered. Use within 48 hours and reheat only the portion needed.
Serve assembled sundaes immediately and do not refreeze melted servings.
