Thin enough to bite

Yoghurt bark is a frozen sheet, not a soft ice cream. The aim is a thin piece that can warm slightly in the mouth. Spreading the mixture too thick creates a hard block that is awkward to bite.

Thick yoghurt gives more body and less obvious iciness than a thin pouring yoghurt. Even so, it will freeze firmly. Honey or syrup softens the texture a little and balances tang, but this remains a crisp frozen snack.

Keep fruit pieces small

Thin strawberry slices freeze more evenly with the yoghurt than whole berries. Pat them dry after washing so extra water does not collect around the surface. Distribute fruit across the rectangle so each broken piece receives some.

A thin chocolate drizzle is easier to bite than a solid chocolate layer. Let the melted chocolate cool slightly before drizzling, but keep it fluid enough to form narrow lines.

Serve in modest batches

The bark softens quickly at room temperature and will not remain crisp on a table throughout a gathering. Put out a few pieces at a time and keep the rest frozen.

Do not describe it as a portable room-temperature snack. It needs a freezer until shortly before eating, and melted yoghurt left on a plate cannot be turned back into the same neat bark simply by chilling it.

What you'll need

  • 400 g thick Greek-style yoghurt
  • 2 tbsp honey or maple syrup
  • 150 g strawberries, hulled and thinly sliced
  • 30 g dark chocolate, optional

Let's make it

  1. Line a small freezer-safe tray with baking paper. Make sure it fits flat in the freezer.
  2. Stir yoghurt and sweetener together. Spread into a rectangle about 1 cm thick rather than filling the entire tray too thinly.
  3. Pat strawberry slices dry and press them lightly into the yoghurt.
  4. If using chocolate, melt it gently in a heatproof bowl over warm water, then let it cool slightly and drizzle thinly over the top.
  5. Freeze flat for at least 4 hours until solid. Lift with the paper and break or cut into small pieces. Serve directly from the freezer.

Make it your own

Use blueberries cut in half instead of strawberry slices.

Maple syrup replaces honey; the yoghurt still contains dairy unless a suitable alternative is used.

Keeping it fresh

Transfer frozen pieces to a sealed freezer container with paper between layers. Use within two weeks for best texture.

Keep frozen until serving; do not refreeze pieces that have melted on the table.
