Granita is meant to be crystalline

Unlike sorbet, granita celebrates small separate ice crystals. You do not need a smooth purée or a powerful machine. The repeated scraping is what turns a frozen lemon mixture into a light spoonable dessert rather than a single slab.

Choose a shallow dish that fits securely in the freezer. A broad metal dish can freeze quickly, but any suitable food-safe freezer container works if you allow for its depth and material.

Balance before freezing

Lemons vary in sharpness. Measure the juice rather than relying on a fixed number of fruits, and strain out pips. Finely grate only the coloured zest; thick pieces of white pith can make the dessert bitter.

Sugar affects both flavour and freezing. Dramatically reducing it creates a harder, sharper ice and changes the scraping rhythm. If the first batch is too sharp for you, make a measured adjustment next time rather than adding dry sugar to the finished crystals.

Stay involved during the freeze

Scrape from the edges towards the centre because the edges usually freeze first. Break up any large frozen sheets as you go. Setting a reminder is useful: the method needs short visits rather than continuous work.

If you miss a scraping interval and the mixture freezes solid, leave it only until a fork can work through the surface, then scrape firmly. The crystals may be larger, but you do not need to melt the whole dish and start again.

What you'll need

  • 120 ml freshly squeezed lemon juice, strained
  • 100 g caster sugar
  • 400 ml water
  • Finely grated zest of 1 unwaxed lemon

Let's make it

  1. Warm sugar with 150 ml of the water, stirring until dissolved. Remove from heat.
  2. Add remaining water, lemon juice and zest. Cool completely, then pour into a shallow freezer-safe dish and cover.
  3. Freeze for about 1 hour, until ice begins forming around the edges. Scrape those crystals into the centre with a fork.
  4. Repeat scraping every 30–45 minutes for about 3 more hours, breaking up firm patches until the whole dish is a loose crystalline ice.
  5. Fluff with a fork immediately before spooning into small chilled glasses.

Make it your own

Replace a small portion of lemon juice with lime for a mixed citrus version.

Add a few mint leaves to the warm syrup, then remove before freezing for a subtle aroma.

Keeping it fresh

Keep covered and frozen for up to one week for best quality. Scrape again before serving if crystals have clumped.

Serve immediately in small portions; melted granita becomes lemon syrup and should not be left on a warm table.
