Sugar affects texture
Sugar is not only a sweetener in sorbet; it also influences how firmly the water freezes. Removing most of it can produce a hard icy block rather than the same dessert with less sweetness. This recipe starts with ripe mango so the fruit flavour remains strong.
Mango ripeness varies, so taste the unfrozen mixture. It should taste a little sweeter than the final frozen dessert is expected to, because intense cold changes how flavour is perceived. Lime balances sweetness without turning the sorbet into a citrus dessert.
Use a shallow container
A shallow layer freezes more evenly and is easier to break up for the second processing stage. A deep bowl may leave a soft centre beneath a hard outer shell.
The re-blending step reduces large ice crystals but does not make a home freezer identical to a churning machine. Expect a firm sorbet that benefits from a short softening period before scooping.
Work within the machine's limits
Do not force a solid frozen slab into an ordinary blender. Break the partly frozen mixture into manageable pieces and use equipment designed for them. If it becomes too hard, allow it to soften until workable rather than risking the motor.
Without suitable equipment, scrape and stir the mixture several times during freezing instead. The result will be coarser and closer to a fruit ice, but still useful served in small spoonfuls.
What you'll need
- 500 g ripe mango flesh
- 90 g caster sugar
- 100 ml water
- 1 tbsp lime juice, plus a little more to taste
Let's make it
- Warm sugar and water in a small pan, stirring until dissolved. Remove from heat and cool completely.
- Blend mango flesh, cooled syrup and lime juice until smooth. Taste for a clear fruit flavour with gentle acidity.
- Pour into a shallow freezer-safe container, cover and freeze for about 3 hours until firm around the edges but still breakable.
- Break into small pieces with a sturdy spoon. Process briefly in a machine rated for frozen ingredients until smoother, then return to the container.
- Cover and freeze another 3 hours or until firm. Let stand briefly before scooping if very hard.
Make it your own
Lemon juice can replace lime, added gradually to taste.
Frozen mango can be used according to its packet preparation instructions, then cooled before making the mixture.
Keeping it fresh
Keep covered in the freezer and use within two weeks for best texture. Label the date.
Remove only the amount needed and do not refreeze a fully melted serving.
