Kefir brings tang, not a health promise
Plain milk kefir gives this smoothie a tangier base than ordinary milk. Pear's mellow sweetness makes that acidity feel rounded, while a small banana portion adds enough body to keep the drink from feeling thin. Choose an unflavoured kefir so you can control the vanilla and fruit balance yourself.
Different brands have different thicknesses and acidity. If yours is very thick, add a splash of cold water after blending. If it is quite loose, leave the recipe as written and expect a lighter drink. There is no need to describe it as a cure, detox or guaranteed digestive benefit: the reason to use kefir here is its flavour.
Ripeness is the main texture adjustment
Pear can feel grainy even after blending, particularly when it is underripe. Choose a pear that gives near the stem and smells gently fruity. A hard pear will not become soft simply because it has been cut smaller. If the only pears available are firm, postpone this recipe rather than adding enough banana to hide them.
Vanilla should connect the pear and kefir, not dominate them. Use a small measured amount, and taste before adding more. The lemon is similarly restrained because kefir already contributes acidity. Serve in plain glasses without a heavy topping; this is a quick fruit drink, and its lightness is part of the point.
What you'll need
- 220 g ripe pear flesh, cored
- 200 ml plain milk kefir
- 60 g peeled banana
- 1/4 tsp vanilla extract
- 1 tsp lemon juice
Let's make it
- Wash and core the pear, removing the stalk and hard centre. Peel it if the skin is coarse, then cut the flesh into small pieces.
- Pour the kefir into the blender, followed by pear, banana, vanilla and lemon juice. Blend until the fruit is incorporated.
- Taste and check for pear graininess. Blend again briefly if needed, then pour into two glasses and serve cold.
Make it your own
Plain drinking yoghurt can replace kefir, but the acidity and thickness will differ.
A dairy-free kefir-style product is not identical to milk kefir; choose an unsweetened version and check labels if avoiding milk.
Keeping it fresh
Keep kefir chilled according to its label. Refrigerate finished smoothie promptly in a covered container at 5°C or below and use within 24 hours, or sooner if the kefir's opened-pack instructions require it.
