Let the biscuits provide the flavour

Caramelised spiced biscuits contribute toasted sugar, warm spice and a little texture. The recipe does not need biscuit spread as well; that would add another concentrated sweet ingredient and make the result heavier.

Biscuits differ in how strongly they are spiced. Taste one before deciding on the optional cinnamon. A strong extra dusting can obscure their caramel flavour and leave a dry sensation on the surface of the shake.

Crumbs change the thickness

Biscuit starch absorbs liquid as it stands. The drink may feel noticeably thicker after several minutes even if the ice cream is melting. That is why the milk quantity is slightly more generous than in a plain vanilla shake.

Do not prepare the whole drink far ahead and expect the same texture. Crush the biscuits in advance if helpful, but keep them dry and add them only after the creamy base is blended.

Choose how much crunch remains

Fine crumbs distribute evenly and give a smooth biscuit flavour. Coarser pieces create contrast but may require a spoon. A mixture of both offers a little texture without leaving large biscuit fragments at the bottom.

The topping is deliberately small. A thick blanket of crumbs becomes damp paste rather than staying crisp. Add the reserved teaspoon at the last moment and serve promptly so it provides a brief, pleasant contrast.

Keep the serving practical

A cold plain glass is enough. Coating the rim with spread and crumbs makes the drink messier and introduces unmeasured sweetness. If decorating for an occasion, keep the edible rim narrow and include its ingredients when checking allergens.

What you'll need

  • 260 g vanilla ice cream
  • 190 ml cold milk
  • 45 g crisp caramelised spiced biscuits
  • ⅛ tsp cinnamon, optional

Let's make it

  1. Crush biscuits by hand, reserving one teaspoon of coarse crumbs for serving.
  2. Blend milk and scoopable ice cream until smooth.
  3. Add remaining biscuit crumbs and optional cinnamon. Pulse briefly to distribute without turning every crumb into powder.
  4. Pour into two glasses and add the reserved crumbs immediately before serving.

Make it your own

Plain digestive biscuits give a milder version; retain the small cinnamon pinch.

Use gluten-free spiced biscuits only after checking they suit the intended eater and handle them separately if necessary.

Keeping it fresh

Serve immediately. Refrigerate an untouched leftover portion promptly and use within 24 hours; expect softened biscuits and a thicker, less distinct crumb texture.
