White chocolate needs a gentle hand
White chocolate supplies sweetness, cocoa butter and milk flavour rather than the roasted bitterness associated with dark chocolate. A modest amount is enough for two shakes. Extra sugar is unnecessary because both chocolate and ice cream are already sweet.
Finely chopping the chocolate helps it melt in the warmth of the cream without direct heat. If a few pieces remain, place the bowl over barely warm water and stir gently, keeping water out of the mixture. Avoid high heat, which can make the chocolate seize or separate.
Cool before blending
The chocolate cream must be cold before it meets ice cream. Pouring it in warm would melt the frozen base and turn the recipe into a much thinner drink. Spread it in a shallow bowl to help cooling rather than leaving it in a deep cup.
A chilled mixture may thicken. Loosen it with a spoonful of the measured milk before adding it to the blender. It does not need to be runny enough to pour like water; it only needs to distribute without leaving hard lumps.
Let the base stay simple
Vanilla supports white chocolate without introducing another strong flavour. For a less sweet overall serving, keep toppings plain and use small glasses rather than adding caramel or biscuit sauce.
This recipe takes longer than a straight ice-cream shake because cooling is part of the method. Prepare the chocolate cream ahead if you want the final blending stage to be quick.
What you'll need
- 50 g white chocolate, finely chopped
- 60 ml double cream
- 240 g vanilla ice cream
- 140 ml cold milk
Let's make it
- Warm the cream gently in a small pan until steaming, not boiling. Remove from the heat and pour over chopped chocolate in a heatproof bowl.
- Wait one minute, then stir from the centre until smooth. Cool and refrigerate until cold but still spoonable.
- Blend milk with the cold chocolate cream, then add scoopable ice cream and pulse briefly.
- Divide between two glasses and serve without extra syrup.
Make it your own
A little finely grated lemon zest gives a citrus variation, added at serving.
Use the actual chocolate bar's label to choose a suitable product; dairy-free white-style alternatives behave differently.
Keeping it fresh
Cool the chocolate cream promptly and refrigerate within 2 hours at 5°C or below, covered; use within 48 hours. Serve the shake fresh; refrigerate an untouched extra portion promptly and use within 24 hours.
Allergen notes
Contains milk; white chocolate may also contain soya and ice cream may contain egg.
